Paleo Pancake

I’m not on a 100% raw diet but I do consume some cooked foods.

One of my favorite comfort foods are pancakes. I made this recipe gluten free and I hope you’ll enjoy it.


1 cup of Chestnut flour

1\2 cup of Mesquite flour

2 organic eggs

1/2 cup of water

1/4 teaspoon vanilla

1/2  tablespoon of palm sugar or a sugar of your choice

1/2 teaspoon of baking soda

Start by blending the dry ingredients

Beat the eggs and add them to the dry mix.

Add water until you meet a creamy consistency.

In a frying pan add coconut oil, Nutiva is my favorite brand, and cook the pancakes until done.
